Ingredients

  • 1/4 cup extra virgin olive oil
  • 1 medium white onion, halved and thinly sliced
  • 4 medium zucchini, halved lengthwise and thinly sliced
  • 1/4 cup water
  • 1 teaspoon salt
  • 2 tablespoons milk (optional)
  • 1/2 pound linguini or spaghetti
  • Freshly grated parmesan cheese

Tools

  • Large pot
  • Mixing spoon
  • Strainer
  • Large skillet with a lid

Method

  1. In a large skillet, combine olive oil, onion and zucchini. Saute over medium-high heat for about 5 minutes. Reduce the heat to medium low and add water and salt.
  2. Cover and continue to cook until zucchini and onions are soft.
  3. Meanwhile, in a large pot, cook pasta according to package directions.
  4. Add the pasta to the zucchini mixture and stir to combine.
  5. Serve hot with freshly grated parmesan cheese.
