4 medium zucchini, halved lengthwise and thinly sliced
1/4 cup water
1 teaspoon salt
2 tablespoons milk (optional)
1/2 pound linguini or spaghetti
Freshly grated parmesan cheese

Method
In a large skillet, combine olive oil, onion and zucchini. Saute over medium-high heat for about 5 minutes. Reduce the heat to medium low and add water and salt.
Cover and continue to cook until zucchini and onions are soft.
Meanwhile, in a large pot, cook pasta according to package directions.
Add the pasta to the zucchini mixture and stir to combine.
