Ingredients

  • 1 onion, quartered without skin
  • 3 cloves garlic, smashed
  • 2 tomatoes
  • 4 small or 2 large tomatillos, husks removed
  • 1-2 serrano peppers
  • 1 lime
  • salt

Method

  1. Place all ingredients whole on the grill or grate over campfire to “sweat” or roast. The goal is to get the skins to peel off, so you will want to char it all a bit as if roasting a pepper.
  2. Remove ingredients from fire, peel away skins from all ingredients except onion and garlic, and place in a bowl.
  3. We cheated and used an immersion blender at the party, so do this if you have access to power out there. Otherwise finely chop each ingredient and place together in the bowl (this should be easy because the vegetables should be tender from roasting).
  4. Squeeze a whole lime into the bowl, and season with salt, to taste (which will probably be a good amount). Enjoy with tortilla chips or over meat.
