Ingredients

  • 2 8-ounce packages baby bella mushrooms, sliced
  • 2 12-ounce packages Smart Strips beef strips
  • 1 medium onion, sliced into crescents
  • 2 cloves garlic, minced
  • 2 cups veggie broth or bouillon equivalent
  • 1 tablespoon butter
  • 1 20-ounce package of egg noodles
  • 12 ounces sour cream

Method

  1. Saute onions and garlic till translucent, about 5 minutes.
  2. Add beef strips and brown and meld with the onions.
  3. Add butter and mushrooms, saute for another 5 minutes.
  4. Add vegetable broth, bring to a boil, deglaze the pan to get up all the good bits, and reduce to a simmer.
  5. Meanwhile, boil noodles only until very al dente. Drain, and add to the beef mushroom broth mixture. Finish cooking the noodles in the broth.
  6. Add ¾ of the package of sour cream and stir to combine completely. Save the other ¼ of the sour cream for dolloping on finished bowls of stroganoff.
