Garlicky Lima Bean Spread

Ingredients
- 1 cup dried lima beans, soaked overnight, drained, and rinsed
- 1 3-inch piece of Kombu, or 1 teaspoon vegetable bouillon
- 1 tablespoon extra virgin olive oil
- 5 cloves garlic, minced
- 1 teaspoon cumin
- 1/4 teaspoon red pepper flakes
- 1 teaspoon fresh sage, minced
- 1 teaspoon lemon zest
- 2 tablespoons lemon juice
- Salt and pepper
Method
- In stock pot or dutch oven, add lima beans, kombu or bouillon, and enough water to cover 1 inch, and bring to a boil.
- Reduce to a simmer, covered for 1 hour. Add salt if needed. Drain and remove kombu if used.
- Saute minced garlic in olive oil with cumin and red pepper flakes for about 1-2 minutes, or until fragrant. Add sage and salt.
- Add garlic mixture to the lima beans, and then add lemon zest, lemon juice, salt and pepper. Blend or process until smooth.
- Serve with a drizzle of olive oil and paprika.
