Ingredients

  • 1 cup dried lima beans, soaked overnight, drained, and rinsed
  • 1 3-inch piece of Kombu, or 1 teaspoon vegetable bouillon
  • 1 tablespoon extra virgin olive oil
  • 5 cloves garlic, minced
  • 1 teaspoon cumin
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon fresh sage, minced
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • Salt and pepper

Tools

  • Food processor or blender
  • Knife
  • Large pot
  • Microplane grater or zester

Method

  1. In stock pot or dutch oven, add lima beans, kombu or bouillon, and enough water to cover 1 inch, and bring to a boil.
  2. Reduce to a simmer, covered for 1 hour. Add salt if needed. Drain and remove kombu if used.
  3. Saute minced garlic in olive oil with cumin and red pepper flakes for about 1-2 minutes, or until fragrant. Add sage and salt.
  4. Add garlic mixture to the lima beans, and then add lemon zest, lemon juice, salt and pepper. Blend or process until smooth.
  5. Serve with a drizzle of olive oil and paprika.
