Ingredients

  • 2 cups flour
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup sugar
  • 1/2 cup canola oil
  • 4 ripe bananas, mashed
  • 1/4 cup water
  • 1 vanilla extract
  • 1 cup semi-sweet chocolate chips

Method

  1. Preheat oven at 350˚F and lightly grease muffin tins. No need to grease if you plan on using muffin cups.
  2. Mix flour, baking soda and salt together in a medium-sized bowl.
  3. In a large bowl, beat the sugar and oil together, then added mashed bananas. Stir in the water and vanilla and mix thoroughly.
  4. Add the flour mixture, along with chocolate chips and stir to mix.
  5. Pour batter in each muffin tin no more than halfway.
  6. Bake until the Banana Chocolate Chip Muffins are golden brown and a toothpick inserted into the center comes out clean.
