Coconut Curry Soup

I mentioned in my vegetable dehydrating post that my dad wanted some good backpacking meal ideas for a weekend trip he was planning. I knew he wouldn’t do much more than heat something up, which was understandable, but limiting in terms of what he could make. I stumbled upon this coconut cream powder that I had bought for another trip and knew right away that a soup recipe would work really well.

I came up with this Coconut Curry Soup and it was good enough that I actually made it for lunch at home several times since – not something I can say about most backpacking recipes. The coconut cream powder is a little hard to find, but it’s definitely worth seeking out. You can find it in some Asian grocery stores and, of course, online.

Ingredients

  • 30 grams coconut cream powder (1/2 a packet)
  • 1-2 cubes vegetable bouillon
  • 1 teaspoon curry powder
  • Pinch of cayenne
  • A handful of rice noodles
  • A handful of dehydrated veggies
  • 2 cups water

Tools

  • Small pot

Method

  1. At home, combine coconut cream powder, bouillon, curry powder and cayenne in a small zip top bag.
  2. In another bag, portion out your noodles and dehydrated veggies.
  3. At camp, boil the noodles and dehydrated veggies in the water.
  4. Once the veggies are re-hydrated and the noodles are tender, stir in the coconut cream mixture.

  2. Looks delicious! I didn’t know about the coconut milk powder. I might try throwing in some dehydrated shrimp or chicken or some cashews or something for extra protein. Yum!

  5. We tried this soup on our canoe trip and it was amazing. I’d like to make it at home and was wondering if I could substitute the coconut cream powder for coconut milk as the powder is hard to find at my local store. If so how much coconut milk should use? Thx!

    1. Hi Kerstin! You’re right, most powdered coconut milk has milk derivatives in it, but Native Forest makes a vegan one. I’ve seen it at Sprouts and also on Amazon. Hope that helps!

  7. at all, I can not understand why you people eat Pre-Cooked foods? they contain a lot of conservative and unhealthy Materials! it’s better to make coconut milk yourself! it’s not so hard!

  8. This looks so great! Does anyone know if you can just pour boiling water over the mixture and let sit to cook? Or do you have to boil it in the pot? Either way, I’ll definitely be adding it to our camping meal idea arsenal. But I would love it if I could use it in a hotel as well.

  9. I love this recipe! I found that I needed to separate out the veggies from the noodles when rehydrating because the veggies took longer to reconstitute.
