Ingredients

  • ½ red bell pepper, julienned
  • 3 green onions, thinly sliced
  • ½ red cabbage, thinly sliced
  • 1 carrot, julienned
  • 9.5 ounce package soba noodles
  • ½ cup tahini
  • ⅔ to ¾ cup water
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon honey
  • salt and pepper, to taste

Method

  1. Cook noodles according to package directions. Drain and rinse well with cold water.
  2. Meanwhile, make the dressing. Mix tahini, lemon juice, honey, and ⅔ cup water together. Season to taste with salt and pepper. Thin the dressing with additional water if needed.
  3. Combine noodles, veggies and dressing in a big bowl, tossing to coat well.
