Ingredients

  • 1 1/3 cups all-purpose flour
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 5 tablespoons unsalted butter
  • 2/3 cup sugar
  • 2 large eggs, lightly beaten
  • 2 very ripe bananas, mashed
  • 1/2 cup coarsely chopped walnuts
  • 1 tablespoon bourbon

Method

  1. Preheat the oven to 350° F.
  2. Whisk together the dry ingredients in a mixing bowl.
  3. Cream together the butter and sugar in another mixing bowl, until the mixture is light yellow in color. Add the dry ingredients to the butter/sugar mixture. Beat the eggs in, one at a time.
  4. Fold in the mashed bananas, walnuts, and bourbon.
  5. Pour the mixture into a buttered loaf pan, and bake for 50-60 minutes, until a butter knife or toothpick comes out cleanly.
