Ingredients

  • 1 cup sugar
  • 1/2 cup butter, softened
  • 2 tablespoons chia seeds
  • 6 tablespoons water
  • 1 cup almond milk
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh blueberries
  • 1 cup fresh blackberries
  • 1 cup fresh raspberries

Method

  1. Preheat oven to 350 degrees (or 335 degrees above 3000 ft)
  2. In a small bowl, mix chia seeds and water together. Set aside for about 5 minutes, until it becomes jelly-like.
  3. In a large bowl, cream together butter and sugar. Add chia mixture and milk.
  4. In a medium bowl, sift together flour, baking powder, and salt.
  5. Add dry ingredients to the wet, and mix until just combined.
  6. Carefully fold in berries (although it’s fine if they break up a bit).
  7. Bake for 55-75 minutes, until brown on top and a butter knife comes out clean.
