Ingredients
- 12 strips bacon (or tempeh bacon)
- 4 large tortilla wraps
- 1/2 cup cream cheese
- 2 1/2 cups cooked lentils
- 1 large bell pepper, cut into long thin strips
- 4 leaves kale, thinly sliced
- 1/2 cup bottled goddess dressing
Method
- First, cook the bacon in a skillet. If you’re using tempeh bacon (highly recommended!), cook it in a little oil to crisp it up.
- Spread about two tablespoons of cream cheese on each of the tortilla wraps.
- Next, divide the lentils between the tortillas, followed by the bell pepper and kale.
- Drizzle about two tablespoons of the goddess dressing on top of the vegetables.
- Roll up tightly like a burrito and then wrap in plastic wrap or foil for your adventure.
