It’s been a nice quiet holiday season, but things are starting to ramp up again. As we get busier, though, we don’t want to lose our focus on getting outside, because it is still one of the most important aspects of our lives.

Our trips may be transitioning from extended camping trips to shorter, more spontaneous day trips, but including healthy and satisfying meals is still an essential. Wes and I recently became certified foster parents, and we’re excited to include kids in our near-future adventures. We don’t have any kids in the house yet, so we are using this time to do any last minute preparations we can think of. This includes figuring out how to streamline our normal routines so we can spend more free time playing with kids. It also includes figuring out some easy kid-friendly outdoor recipes.

We’ve started leaning back into the idea of portable foods wrapped in baked bready things. Most of our recent trips have included standard pigs in a blanket (hot dogs and cheddar cheese rolled in crescent rolls from the can). I highly recommend these, but if you swap crescent rolls for frozen puff pastry and hot dogs for buffalo chicken, you up your fancy game significantly.

The toughest part of this recipe is remembering to thaw your puff pastry in time to bake it (I prefer to stick it in the fridge the night before if I think of it), and deciding on your favorite shape to form it into. As you can see, I’m not great at picking a favorite shape (they’re all so fun!).

Everyone will love this recipe and it tastes just fine out of a cooler or even at room temperature. Feel free to swap the chicken with veggie chicken strips or baked marinated tofu to make it vegetarian and less perishable.

I lost my first two grandparents ever in 2016. One from each side. I recognize that this is pretty great for being 32 years old, but after so long, I got to the point where I just thought it would never happen to me.

Both grandparents lived a long and happy life, and left us with tons of happy memories to cherish for many more years. Memere was the grandmother that Aimee and I shared from our dad’s side, and she passed away this week last January. She and Pepere used to travel across the country from North Carolina to see us every year. They’d sleep in the camper shell on top of their pick up truck, even when that truck was parked in our driveway for the summer. The original #vanlife?

My grandfather on my mom’s side passed away last month. He was known for seeing the most pleasant side of all things, and his puns. Every time I visited my grandparents growing up, there would be a Costco-sized tub of sour cream waiting for me to turn it into as many pound cakes as it would make. I just used Nana’s recipe, but somehow Grandpa would convince me that I made it best.

My parents came to visit me for Christmas, and my mom brought with her a pound cake. We took it with us cross-country skiing last week. It’s really the perfect snack for a day in the snow. It is tough enough to pack well, and goes great with a warm drink. It is by no means a low-calorie food, so an active day outside is a good time to consider it truly justified.

The golden hour has just passed and the sun’s warm rays are slipping away. The excitement of the day is starting to wear off and the anticipation of food and a cozy sleeping bag become the focal point. It’s time to stop, get some dry layers on and enjoy a warm meal before settling in for the night.

That’s pretty much a typical end of a backpacking day for me. It seems no matter how much or little ground has to be covered in a day, I’m always racing to set up camp and get dinner going before the moon comes up. Luckily, on our trip to Mineral King, we had this Salsa Soup with Corn Dumplings planned for dinner.

In a nutshell, this is a spicy tomato based broth that gets covered in cornmeal batter dumplings. Let it simmer for 10 minutes until the batter is cooked. When you peek into the pot, your dumplings will probably have converged into one delicious cornbread-like pillow over the soup. In each bite you get a subtly sweet starch layer followed by hot and spicy broth. Soup naysayers stand down because this meal is comforting and will satisfy any ravenous hiker.

In preparation for the trip, I used a dehydrator for the first time. I didn’t follow any recipes but rather put random stuff on the trays and let it go for a long time until it appeared to be completely dry. There are better ways to do things, but I’m impatient, and I was really excited to use this machine.

Fortunately, the homemade salsa and red bell pepper I added to the recipe rehydrated really well in the soup and added texture to the broth. My salsa was pretty basic (lazy), just fresh tomatoes, cilantro, salt and lime that I pureed in a food processor. If you don’t have access to a dehydrator, you can purchase dehydrated bell peppers and dehydrated salsa. Substitute the amounts called for in the recipe with 3 tablespoons dehydrated bell pepper and 3 tablespoons dehydrated salsa.

As for the dumplings, I’m not talking about Asian-style dumplings but the other kind which consists of steamed or boiled dough or batter. Read more about the origin of dumplings here.

This recipe is modified from my standby Backpacking recipe book Simple Foods for the Pack – also mentioned in this Grits Cakes post.

Ok, so they aren’t exactly potato skins, but they taste the same, which is amazingly delicious, and the shape is much more appropriate for camping.

I’ve always wanted to make potato skins on the campfire, but I didn’t want the extra task of dealing with the rest of the potato. I finally devised a way to do it with no waste or second recipe. I cut the potato into thick disks, or medallions. They baked up nicely in a dutch oven in a matter of about 15 minutes. A dutch oven would do larger quantities, but I also like the idea of using a pie iron and having my guests cook up their. This would make cooking them into more of an activity, and it would be more difficult to get filled up before dinner. (It’s hard to stop yourself from shoveling too many potatoes into your mouth when you’re hungry- or ever).

I recently tested this recipe out while I was stuck in the latest “storm of the century” on the east coast (we’ve been having a lot of those lately). I was in North Carolina, which got more ice than snow. Though dangerous, the woods looked incredibly beautiful. It was as if every tree branch and blade of grass was encased in glass.

Campfire food is my favorite kind to make in the winter. No one should have to be banished away from the warmth while cooking for the rest of the group.

Making pancakes while backpacking is easy and just what you need to fuel you up for another day on the trail. We made these Cornmeal Blueberry Pancakes on our last day of a short 2-night trip. It was perfect for a leisurely morning while enjoying the tranquility and immensity of White Chief Dome in Mineral King, Sequoia National Park.

All the batter ingredients where pre-measured at home and put into a gallon-size zip-top bag. At camp, the only thing left to do was to add water directly in the bag and mix. Tip: write how much water to add on the bag before you leave.

The Trader Joe’s dried blueberries we used are moist and naturally sweet. They melted in the batter and made for delicious sweet and tart bites against the earthiness of the cornmeal. If you don’t care for a sweet breakfast or want to save the weight of maple syrup, these pancakes are perfectly good without syrup as well.

Ever since I moved away from my best friend in Florida to go west, we’ve talked about meeting up in a cool place halfway between us for an adventure. We’ve talked about Moab, City of Rocks, Montana, and the Tetons, but none of it ever happened. People started having babies and getting married, and we’d meet in Florida or California for those events instead. We’d see each other for maybe a day, usually surrounded by other loved ones at the same time. This summer, we finally did it! And this time, we decided to meet in Banff.

We started planning last winter. Everyone had grand ideas of the activities we should include in our week. Climbing in the Bugaboos, backpacking, peak bagging, and paddleboard camping in Banff National Park, roadtripping up to Jasper National Park on the Icefields Parkway, and hot springs of course! Planning as a group of 4 (our husbands got to come) ain’t usually easy, because people aren’t often on the same page. It was only hard for us because we were all into cramming in everything!

When the trip finally happened, we decided officially on “the no plan plan,” which worked out very well. Though some of our activities were thwarted or cut short due to constant rainstorms or long drives, we did mostly everything on the list! Except see a moose. Still waiting for that one…

I was responsible for all the camping food for the trip, so I spent a month or so dehydrating things. Probably the best thing we ate was this Backpacking French Toast. I dehydrated my own eggs at home (here’s how), and we simply dipped fresh Canadian bread in them, fried the bread up, and smothered it with local Canadian maple syrup. It was a perfect mix of lightweight, hearty, locally sourced, and rustic.

It was wonderful to finally get to spend a whole week with my Anne and Drew, especially in such an incredible place. It’s rare to find people you get along with so easily that you can all truly go where the adventure is, but these people are those people for us. I can’t wait to plan another adventure in another new amazing location. The world has a lot of them!

I recently purchased a dehydrator, and have been getting more daring in my recipes. Most people I’ve spoken to mainly use their dehydrators for camping recipes like jerky and dried fruits and vegetables. I’ve been more into making powdered things so far. Sauces are nice to have in the freezer, ready to get tossed with pasta or rice for your next camping trip. But what I’ve been most impressed with it for so far is making powdered eggs.

Eggs can be tricky both car camping and backpacking. They are perishable and fragile. However, they offer so much versatility to camping recipes that they are often worth the effort. They are an excellent source of protein for either a quick or a lavish camping breakfast, and can also be used to bind dishes like baked pastas, or coat things like french toast (recipe coming shortly).

Here are some tips for dealing with them in both contexts:

REI sells egg holders for carrying whole eggs, but they don’t hold very large ones. I like to use them for holding hard-boiled eggs.

Another great way to transport eggs is to crack them together into a jar. You can squash the jar into a cooler this way without worrying about breaking them, and just shake the jar when you’re ready to scramble them.

Backpacking is obviously the most difficult scenario to bring eggs into, unless they are dehydrated. You can buy them dehydrated, or try making your own.

I did a lot of research before attempting my own powdered eggs, and none of it sounded good. Some people dehydrate eggs after already cooking them, and some try raw. Many people have difficulty grinding the eggs into a powder. They complained that the rehydrated texture was grainy, or that the egg clumped up in the food processor from not drying completely or evenly. I had issues with getting the amount of water correct upon rehydration, and they turned out too thick the first time. But since then, I’ve gotten them right. And they are impressive.

I’m including my method for making your own dehydrated powdered eggs here. The recipe I made with the powdered eggs on my last trip is pictured here. I just rehydrated hash browns, eggs, and dehydrated cheese, and scrambled them together in some oil.

Please let us know if you have any of your own great methods for dealing with eggs while camping.

It’s a silly name but it’s something to hang on to and it motivates us to coordinate 5 different schedules so we can get outside and have an adventure together.

We have been slowly tackling the SoCal six pack summits. The hikes to these peaks are the ones with the most elevation gain and typically are done to train for the John Muir Trail and/or Mount Whitney. So far, we have completed Mt. Wilson, Cucamonga Peak, Mt. Baldy, San Bernardino and San Jacinto. The last and final challenge is the largest one – San Gorgonio which I’m hoping to get to conquer in the next 3 weeks.

With all this hiking under my belt, I’ve learned a few things.

After years of constant blisters, I finally found a solution that works for my feet – Brooks Cascadia Trail Runners. Taking care of your feet is critical for backpacking, hiking and trail running. It’s such a relief to know that I can now go outside, play hard and go home without destroyed feet.

I’ve taken for granted the trail experience that I have accumulated. Many of the hikes have been with people that don’t have a lot of hiking experience. That has been really exciting – that is one of the goals of Dirty Gourmet – to get people outside! At the same time, it’s been a little nerve-wracking to see how underprepared some people were for serious all-day long hikes. Here’s a list of the ten essentials you should always have with you when venturing outside.

I realized that if someone were to get injured on the trail, I have no clue about first-aid procedures and neither would anyone else in the group. I’m taking care of that by signing up for a Wilderness First Aid class, a 2-day long workshop offered by REI and the Wilderness Medicine Institute. When I finish this class, I will receive a NOLS Wilderness Medicine Institute Wilderness First Aid certification and should be able to make an informed decision should anything ever happen in the backcountry. Check the schedule for a class near you here.

All this hiking has forced me to come up with different fun snacks to share with everyone. Being that I always crave salty crunchy snacks while hiking, I decided to make homemade cheese crackers. I made a regular version and a vegan version using Daiya cheese. Both turned out well – with many even preferring the vegan ones! This recipe comes together really easily and you get to play with cookie cutters. Have fun with the flavors and try your own versions with different herbs and maybe even chopped sun-dried tomatoes. Hiking is not done. I’m all ears for your fave trail snack suggestions.

As part of our Dirty Gourmet adventures, we have the chance to connect with like-minded people who push us and inspire us in our craft. At the end of May we had the pleasure of being part of Aspire2Be fundraising effort as a sponsor. Aspire2Be is a non-profit organization dedicated to empowering young women through outdoor experiences, action sports and art programs.

Non-profit and fundraising sounds fancy, but really it was a wonderful day hiking up to the peak of San Jacinto with a great group of people. Pamela Zoolalian is Aspire2Be‘s founder and the nicest most badass woman I have met. She is the kind of person that is a big deal but you would never guess from their demeanor and personality. I had a lovely time chatting her up and hearing about her recent experience soloing the John Muir Trail.

For the hike, we had our famous Granola Brittle and Goat Milk Gouda Veggie Sandwiches – my favorite sandwich of the moment. The critical ingredient here is really the cheese. It’s a creamy gouda cheese with a little tangy goat-milk goodness on the finish. Pair it with spinach, roasted red peppers, turkey or baked tofu for protein and you have yourself a winning combination.

If you haven’t gone up to San Jacinto yet – we highly recommend it. Start at the Palm Springs Aerial tram and go from sweltering desert heat to breezy mountain air in 10 minutes. The hike itself is a moderate 12 mile round trip with gentle elevation gain and sweeping vistas at the top. You can do this as a day trip or make it a leisurely backpacking trip by staying at the Round Valley Camp (note: campsites can be reserved but only via a mail-in application)

Let me know what kind of yummy sandwich concoctions you’ve been making so we can try them out on our next weekend trip.

We take a lot of climbing day trips or quick overnighters whenever we can get away with them. These are usually not well-planned (“Oh hey, we both get off of work early today and go into work late tomorrow- let’s go!”) so it’s hard to plan our meals very well. The idea behind portable packet meals is that you can whip up a batch of rice or grits or mashed potatoes (or just use leftovers from last night), stuff them with cheese, sausage, vegetables, or anything delicious that you have in your house, and you’re good to go. If you want to take it a step further, wrap that whole thing in some sort of dough and bake it for 20 minutes.

I don’t have muffin tins in my house, or I’d probably have used them for this. I used individual ramekins, so the serving sizes were on the large side. We’re planning to make empanadas in this style for our backpacking trip this weekend. Do you have another idea I could try? I still need a lunch for the second day.
