<p>We are always cooking Southern food around here, so we finally did a Southern menu for our last event, the Subaru Death Valley Cycling Adventure. We made jambalaya, greens with lemon-tahini dressing (adapted from one of our favorite books, Bryant Terry&#8217;s <a target="_blank" href="https://www.amazon.com/gp/product/0738212288/ref=as_li_tl?ie=UTF8&#038;camp=1789&#038;creative=9325&#038;creativeASIN=0738212288&#038;linkCode=as2&#038;tag=dirtgour0c-20&#038;linkId=770db4e2a5d07f96eb4078e96c38c217">Vegan Soul Kitchen</a><img decoding="async" src="//ir-na.amazon-adsystem.com/e/ir?t=dirtgour0c-20&#038;l=am2&#038;o=1&#038;a=0738212288" width="1" height="1" border="0" alt="" style="border:none !important; margin:0px !important;" />), and these hush puppies. </p>
<p>It was about 15 degrees outside in the backcountry of Death Valley and the mountain bikers had been out riding fully past dark by the time they returned to our camp. They were ready for a hearty meal. The crew was a mashup of different people with different needs, so we were happy to have stumbled upon a vegan <em>and</em> gluten-free method that tasted good to everyone. </p>

<p>We planned to use hot pepper jelly as the dipping sauce for these but forgot it (and we weren&#8217;t about to drive 4 hours back to town to pick some up). We <em>did</em> have some cactus jelly that we&#8217;d purchased (along with a rattlesnake mug) at the Stovepipe Wells gift shop on our way in. We mixed it with the Tabasco-laced pickling juice from the spicy okra on our appetizer tray, and it was pretty delicious. The &#8220;recipe&#8221; isn&#8217;t included, but play with combining some kind of pepper jelly with some cider vinegar, salt and pepper to create your own dipping sauce. </p>

<p>We discovered that the desert is the perfect place to fry. Your outdoor kitchen can handle the smoke and grease much better than your indoor one, cast iron is readily on hand along with a strong stove flame, and people will flip out with excitement when they get to eat your creations. Just remember to bring some kind of container to pour your oil into when you&#8217;re done frying.</p>

<p>It&#8217;s also perfect, of course, for a cold weeknight celebration. Use these puppies as an excuse to eat outside in February. </p>

<p>I&#8217;ve been using dehydrated bean flakes for a long time, but I only recently discovered whole dehydrated beans. I had ordered a <a href="http://amzn.to/2y9h52H">sampler pack of dehydrated veggies</a> to stock my backpacking pantry, and these <a href="http://amzn.to/2yyOzcf">dehydrated whole red beans</a> were in the pack. I didn&#8217;t have high hopes for them, thinking they&#8217;d take forever to rehydrate, but they work so well! I love them because they have more texture than the bean flakes, something I&#8217;m always looking for in my backpacking meals.</p>
<p>This is a one pot meal, and it&#8217;s got lots of protein and fiber, both of which can be difficult to come by in the backcountry. Definitely bring a little bit of vinegary hot sauce (like <a href="http://amzn.to/2Fk6wup">Crystal</a> or <a href="http://amzn.to/2DQuzUP">Tabasco</a>) or even better, some pickled peppers (such as pepperoncinis) along with you.</p>

<p>The celebration of the actual holiday in the outdoors adds to the revival of what truly matters about it- bonding with the people you love.We have heard many stories of Thanksgiving camping trips, and love spending it in our local wild areas ourselves. Even more exciting are the trips venturing deeper into the backcountry. In these cases, it is important to keep the logistics of food simple to allow you plenty of time to reach your destination and enjoy a relaxing time with your loved ones. Keep the meal confined to the essential dishes, and spread out the work among all the guests. </p>
<p>We thought through a few of our must-have dishes and adjusted to make them possible in the backcountry. Cranberry Bourbon Compote is simple and perfect to accompany any other Thanksgiving dishes. It is not as saucy as a standard cranberry sauce, but has the same flavor profile and is lightweight and non-perishable. It is delicious spooned over your other Thanksgiving dishes and would also be a great addition to a breakfast made out of leftovers. </p>

<p>I&#8217;ve always wanted to make potato skins on the campfire, but I didn&#8217;t want the extra task of dealing with the rest of the potato. I finally devised a way to do it with no waste or second recipe. I cut the potato into thick disks, or medallions. They baked up nicely in a dutch oven in a matter of about 15 minutes. A dutch oven would do larger quantities, but I also like the idea of using a pie iron and having my guests cook up their. This would make cooking them into more of an activity, and it would be more difficult to get filled up before dinner. (It&#8217;s hard to stop yourself from shoveling too many potatoes into your mouth when you&#8217;re hungry- or ever). </p>

<p>I recently tested this recipe out while I was stuck in the latest &#8220;storm of the century&#8221; on the east coast (we&#8217;ve been having a lot of those lately). I was in North Carolina, which got more ice than snow. Though dangerous, the woods looked incredibly beautiful. It was as if every tree branch and blade of grass was encased in glass. </p>

										<content:encoded><![CDATA[<p>Last August I committed to starting a plant-based diet. I was vegetarian for years, but struggled with making the leap to going vegan, mostly because I didn&#8217;t want to give up my beloved cheese.<span id="more-9595"></span> I did it though, and now I feel better than ever. It&#8217;s not that I felt bad before, but I feel better now, both physically and mentally.</p>
<p>One thing I&#8217;ve learned while on a plant-based diet is that in order to feel satiated, I&#8217;ve really had to fill up on healthy foods like fruits and veggies, beans, nuts and seeds. This seems obvious, but it&#8217;s easy to be a junk food vegan. Before I would reach for things like cheese and crackers when I got hungry and that would be enough. Without the cheese, I&#8217;ve had to retrain my brain to make these other healthier foods my go-to. It hasn&#8217;t been easy, but it&#8217;s getting easier.</p>
<p>Breakfast feels like an opportunity to cram in as many nutrients as possible in order to start the day feeling satiated. My breakfast of choice lately has been oatmeal and I&#8217;ve been making it on a timer in my rice cooker, so it&#8217;s ready to eat when we get up in the morning. I always mix in some flaxseeds and top it with homemade almond milk, but the other toppings vary depending on what we&#8217;ve got in the house.</p>
<p>One of my favorite combinations has been raspberry, almond butter and cacao nibs. I love this combo so much that when I ran out of fresh raspberries I even started reaching for the freeze-dried ones in the back of my pantry that I had purchased for a backpacking trip. After I did this a couple of days in a row, it occurred to me that this is perfect backpacking food. It&#8217;s filling, but still energizing, and it tastes delicious.</p>

<p>I would use regular rolled oats for this because I don&#8217;t care for gluey instant oats and I don&#8217;t mind the bite of slightly undercooked oatmeal. If you are concerned about fuel use and don&#8217;t mind the stickier instant oats, then you can certainly use those. This recipe serves two, but can easily be scaled up or down.</p>

We like to ski at a little place called <a href="http://bit.ly/202mdeZ">Mountain High</a>, which is usually more like skiing in dirt. <span id="more-9623"></span>I like to think it&#8217;s making me a much better skier in the long run. But last week we got a dumping of real &#8220;pow pow&#8221;, and I found out that skiing on real snow is a blast! </p>

<p>When we go skiing, we usually bring a couple cans of beer with us. Last time, Wes got the bright idea to bury them in the snow so they&#8217;d get super cold for when we were ready to take a break. He found the perfect spot in the woods near the top of the mountain, and started digging a hole. Well, guess what he found- somebody else&#8217;s beer! I guess it was the perfect spot after all.</p>

<p>Later, when Wes decided it was time, he went to dig our beers back up. He chose his ski pole as the perfect digging tool, and ended up stabbing one of the cans. So of course, he had to shotgun it immediately (he&#8217;s a zero waste kinda guy). </p>

<p>In conclusion, beer is good, but having a hot cocktail like this Mexican Hot Cocoa is even better. If you are among the millions who received a <a href="http://bit.ly/1l67K1E">Hydro Flask</a> for Christmas, this is the perfect thing to use it on. These bottles do the best job I&#8217;ve seen of holding the heat in. </p>

<p>Nuts are a great vegetarian source of protein, so I have lots of them around my house. They can be used in all sorts of dishes, but if you make them flavorful on their own, they are perfect to take with you wherever you may go. These orange sesame almonds are similar to the commonly found tamari almonds I’ve seen around, but offer a more subtle and bright flavor combination. I throw a jar of orange sesame almonds into my backpack and take them to work, to the climbing gym, or even skiing. </p>

<p>Everyone knows kale is a superfood, filled with with tons of nutrients. It&#8217;s also sturdy, ultralight, and goes with just about any type of meal you would like to make. There&#8217;s still a chance that fresh kale could be ruined in your pack on a hot day, but once it&#8217;s dehydrated, it becomes invincible.</p>

<p>Yes, you can dehydrate just about every vegetable (great news!), but kale and other dark leafy greens are what to choose before everything else. They dehydrate quickly, but also rehydrate quickly, which is more important. If you&#8217;re looking for a side of creamed greens to go with your dehydrated mac n&#8217; cheese, no problem!</p>
<p>This recipe takes dried kale a step further, though, by crumbling it into super versatile flakes. No more worrying about it breaking up in your pack- it&#8217;s already broken! No need to worry about a separate pot, or the disgusted faces on the picky eaters of the group. Throw some of this into every meal, and it will melt right in. If you&#8217;re short on time, try roasting your greens instead of dehydrating them.<br />
The flavor deepens and you can eat them sprinkled right on top of your food instead of cooking the greens into it. Here&#8217;s a <a href="http://bit.ly/1MR69TY">great recipe</a> for how to roast them. </p>

<p>So when Aimee suggested making a cocktail out of it over the holidays, I was skeptical. She left the job in the hands of our resident bartender, Wes, though, who made up this truly fabulous drink. </p>
<p>If you&#8217;ve ever had a shrub, this is very similar. It&#8217;s only slightly sweet, and a little sparkly. It&#8217;s a refreshing daytime type of drink. Perfect for an afternoon picnic or an afternoon relaxing in your hammock at camp. It&#8217;s a great drink to include in your January activities. You know- because January is when we&#8217;re all out there getting healthier. </p>

										<content:encoded><![CDATA[<p>We&#8217;ve been tweaking our favorite <a href="https://www.dirtygourmet.com/almond-flax-granola/">Almond Flax Granola recipe</a> for a long time now to perfect it, but I just can&#8217;t stop.<span id="more-9414"></span>  As much as I love our brittle-like granola, I was wanting something that wasn&#8217;t quite as sweet.</p>
<p>I&#8217;ve been baking with brown rice syrup recently, with great results. It&#8217;s not as sweet as honey or maple syrup, so I thought I&#8217;d try it instead of the honey in our granola. I&#8217;m so happy with the results! Win!</p>
<p>For Fall, I switched out the almonds for toasty pecans and pepitas, and added some golden raisins for some chewy bits. We took a double batch of this on our recent trip to Cuyamaca and it was devoured on the first morning. </p>
