Bourbon Walnut Banana Bread

Last week was my 1 year anniversary, so we decided to spend it skiing in Big Bear. We almost cancelled the trip when we thought winter was over early again, but then it returned! There was just enough snow to make it worth the trip, though I’d like to go back and get some cross-country skiing in, now that it’s snowing even more!

We normally ski closer to home and just get night tickets, which are pretty inexpensive. Going skiing for a whole day was intimidating to me, so I wanted to make sure we had enough nourishment to survive. Wes packed us sandwiches, and I made us this Bourbon Walnut Banana Bread from Life Currents. We’ve posted quickbread recipes before for similar day trips. They are the perfect snack because they hold up well in a pack, are easily shared, and are hearty enough to feed you when you’re “hangry.” They also go well with warming drinks when you’re freezing, like coffee, or in this case, bourbon. There are lots of flavor combinations for this kind of bread, but banana bread is a good go-to if you often have overripe bananas hanging around like we do. Bourbon and walnuts make it a bit more interesting. I will likely try the same recipe with pecans next time.

Ingredients

  • 1 1/3 cups all-purpose flour
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 5 tablespoons unsalted butter
  • 2/3 cup sugar
  • 2 large eggs, lightly beaten
  • 2 very ripe bananas, mashed
  • 1/2 cup coarsely chopped walnuts
  • 1 tablespoon bourbon

Method

  1. Preheat the oven to 350° F.
  2. Whisk together the dry ingredients in a mixing bowl.
  3. Cream together the butter and sugar in another mixing bowl, until the mixture is light yellow in color. Add the dry ingredients to the butter/sugar mixture. Beat the eggs in, one at a time.
  4. Fold in the mashed bananas, walnuts, and bourbon.
  5. Pour the mixture into a buttered loaf pan, and bake for 50-60 minutes, until a butter knife or toothpick comes out cleanly.

  1. bourbon, walnuts, bananas, and bread already account for roughly 90% of my diet, but i never considered combining them in such a delicious confection!
